Ston Easton Park’s talented Head Chef, Daniel Moon’s award-winning cuisine uses fresh, locally-sourced ingredients packed with flavour to illustrate that sweet can compete in the healthy stakes.

Raspberry Chia Seed and Coconut Pot with Toasted Seeds

Sugar free, dairy free and wheat free - Serves 2

For the raspberry and coconut chia seed pot you will need:

2 tbsp Chia Seeds

200ml Coconut Milk

120g Fresh Raspberries

1 tbsp Vanilla Extract

Drizzle of Orange Juice

1 tbsp of Agave Syrup

For the garnish:

20g Raspberries

25g Pumpkin Seeds

25g Sunflower Seeds

Method:

1.Starting with the raspberry chia seed and coconut pot, simply place all the ingredients into a large bowl.

2. Mix thoroughly before covering with cling-film and placing it to rest in the fridge overnight.

3.The next day, stir and place into small ramekins. To build the garnish, lightly toast the pumpkin and sunflower seeds in a pan over a low heat then decorate along with the fresh raspberries.

Raw Chocolate Fudge Brownie

Sugar free, diary free and wheat free- Serves 4 to 6

The ingredients:

½ a Cup of Buckwheat Groats

1tsp Vanilla Extract

2 tbsp Raw Coco Powder

7 Medjool Dates

6 tbsp Water

25g Walnuts

Method:

1.Begin by lining a small container with baking paper.

2. Next, grind the buckwheat groats using a mortar and pestle until they reduce down to a fine powder.

3. Transfer the buckwheat powder into a blender, along with vanilla extract, Medjool dates and raw coco powder.

4. While this is coming together in the blender, gradually add water to reduce the ingredients to a moist mixture.

5. Once this is combined, fold through the chopped walnuts and then scoop the mixture into the small lined container and freeze overnight.

6. The next day, cut the brownie into pieces and place in an air-tight container. Keep the brownies in the freezer until you are ready to serve. You can make the chocolate fudge brownies even healthier by serving them with some seasonal fruits.
