What is your signature dish? The classic Rock & Rose dishes are grills with a twist, like Surf & Turf, but the one that keeps everyone coming back is the Lobster Linguine. Everyone loves a bit of luxury. Have you got a top cookery tip? Most people don't cook meat at home at a high enough temperature. If you have a good steak, make sure the pan is really hot - don't be afraid of splashing oil. Just as importantly, let it rest afterwards. Is there a top table in the restaurant? We have so many different areas; it really depends on what takes your fancy. There's the cosy Funky Room for private dining; customers love the light and airy Garden Room for parties; the banquettes in the main restaurant are quite romantic; and the sunny tables on the front terrace are always in demand. Is there anyone that you have always wanted to cook for? It would be a joy to cook for Escoffier today, to show him how food has moved on from the traditional French cuisine he documented.
