Chefs at Barista at The Rock, Bury have created a special folded pancake, made to the traditional recipe and then folded over to create a calzone style pancake filled with a combination of black pudding and chorizo.

In honour of Shrove Tuesday, a cafe is encouraging the people of Bury to swap lemon and sugar for black pudding to create a pancake with a difference. Chefs at Barista at The Rock, Bury have created a special folded pancake, made to the traditional recipe and then folded over to create a calzone style pancake filled with a combination of black pudding and chorizo. The Pancakes A La Bury include a delicious mixture of chorizo, finely chopped red onion and Bury’s world famous black pudding, topped with a wholegrain mustard and double cream sauce, and served with a simple mixed baby leaf salad. “This is a first for Bury, but after tasting the black pudding pancake, I am sure it will become a regular on every Pancake Tuesday table.” Victoria Kay, Managing Director of Barista comments: “We have spent the whole of February testing various combinations for the black pudding pancake, and our final recipe is not only tasty, but also tosses brilliantly.” The Bury black pudding pancake will be available for the whole community to enjoy today at The Rock, Bury.

Barista will be giving away one free traditional pancake to everyone who presents a Rock parking ticket
