This autumn The Leconfield restaurant, situated in the historic market town of Petworth in West Sussex, will embark on an exciting new collaboration with eminent French chef Pascal Proyart of One O One restaurant fame in Knightsbridge, London. Pascal Proyart takes on the role of Chef Consultant and will work alongside Head Chef David Lewis.

Pascal has been the chef at renowned One O One restaurant in Knightsbridge for the last 18 years and is delighted to be working for The Leconfield in the heart of the English countryside, taking on this role of Chef Consultant where he will be re-creating all the menus with Head Chef David Lewis. Bringing his contagious enthusiasm for local produce and wealth of experience running one of the best kitchens in London, Pascal is involved in every element of The Leconfield’s new direction; “Since I grew up in the countryside on the coast of Brittany I am thrilled that I now have the opportunity to be back where all of my favourite foods are grown, nurtured and cared for. I love working with the brilliant producers, farmers, fisherman and winemakers in this beautiful part of England, it’s a joy!”

Pascal and David have worked tirelessly to produce a menu that reflects the part of the countryside they are situated in; with beef and lamb from the Goodwood Estate, pork from Storrington, locally grown fruits and vegetables that are literally soil to plate within miles of the restaurant, and fish from the Sussex coast that could not be fresher or more seasonal. Cheeses are also sourced from the county – ‘Lord of the Hundreds’ and ‘Flower Marie’ cheeses are from East Sussex, while ‘Ashdown Foresters’ and ‘Sussex Slipcote’ are from West Sussex. Some ingredients will be from further a-field, and all will be sustainable and of the highest quality. Pascal is also particularly excited about the local wild game shot in the South Downs in West Sussex and is looking forward to serving a variety of game birds and venison from the local area.

The set lunch menu at The Leconfield is served Tuesday to Saturday priced at £18 for 2-courses and £21 for 3-courses, while the dinner menu is available Tuesday to Thursday priced at £25 for 2-courses and £29 for three. Pascal and David will also be serving a Tasting Menu of “Petit Plats” on Friday and Saturday evenings priced at £39 for 4-courses and £49 for 5-courses.
