Sharon Struckman finds a chef with a passion for making delicious gluten free dishes

While on my foodie travels around the county, I came across chef Martin Burke at Hitchin Farmers’ Market. With a desire for cooking healthy, mouth-watering food, Martin has a passion for quality and loves to prepare a wide variety of dishes from many parts of the world. What caught my eye was his gluten-free, vegetarian and vegan food.

Today, many people suffer from a medical condition called coeliac disease, which requires them to have a gluten-free diet that excludes the protein composite found in wheat. Finding a chef who can offer superb-tasting gluten-free treats was a delight. The secret to making gluten-free recipes with soul is imagination, and Martin has an abundance of it!

He makes a really tasty root veggie pie, falafel eggs and a delicious vegan nutty nut pie (to name a few) made using a pastry containing vegan margarine and filled with an array of nuts, veggies, herbs and spices.

I invited a friend of mine who is a coeliac to help me test Martin’s lip-smacking treats and we both thought his gluten-free street food was scrumptious. My favourite was the goat’s cheese and caramelised onion tart, made using cheese sourced from Hitchin supplier Wobbly Bottom Farm.
