Recipe by English Asparagus

Ingredients (Serves 4)

• 1 bundle asparagus

• 1 courgette, sliced

• 15g unsalted butter

• 2 cloves garlic, crushed

• 200g Maris Piper potatoes, peeled and diced

• 1 red onion, sliced

• 6 medium eggs, beaten

• Salt and pepper

Method

1 Drop the asparagus into boiling water and cook for 2 mins. Remove and plunge into ice water.

2 Fry the courgettes in the butter, add the garlic and cook for 6 mins.

3 Parboil the potatoes then add to the pan with the onions and cook until softened.

4 Add the asparagus to the pan with the eggs and season. Once set around the edges, put in the oven at 200c for 6 mins or until set.
