Salmon encroute with Drambuie, cream fraiche and shallot sauce

Ingredients2 salmon steaks8oz ready made puff pastry1 eggFor sauce1 shallot, finely diced1 tsp drambuie1 tsp french mustard2 tbsp cream fraicheSpring onion to garnish

Method1. Pre heat the oven to 180 degrees.2. Roll out the pastry on a slightly floured surface to 1/2 cm thickness and cut two heart shapes with a four inch cutter. Roll one of the heart shapes slightly larger than the other.3. Place the salmon on the smaller heart shape and brush the edges with beaten egg and gently place the larger heart shape and seal the edges.4. Place the salmon in the preheated oven for 15 mins or until golden brown.5. Meanwhile sweat the shallots in the drambuie, add the mustard and cream fraiche. Bring to the boil and once the salmon is cooked, pour over the salmon and garnish with spring onion.
