Tell us about your menu: It covers a mixed bag of everyone's favourites but we do it excellently!

How often do you change your menu? As soon as the customers approve the new dishes, as we always give the new items for the customers to try with our compliments.

What dish on the menu would you recommend to a new customer? The crispy duck is a must as we do the best hoi sin sauce in the area! And for the customer who likes food with some heat, our garlic and chilli King Prawn is delicious.

What initiated your interest in cooking?

My large family!

How would you describe your approach to food?

The only way is the direct way - no complications.

What advice would you give to a novice?

Keep it simple, clean and tidy.

What has been your most memorable (or unusual) meal?

A 10 course banquet meal in a temple on an island off Hong Kong!
