‘We change the recipe of this drink to reflect the season’

The current one is dry Tio Pepe Fino sherry, herbaceous celery bitters and sweet elderflower cordial.

It’s an exciting drink, wonderful for spring and summer and easy to recreate at home. The cobbler is one of the oldest cocktails around so it’s great to be able to modern-ise it as the seasons change.

I was very fortunate to meet Antonio Flores (the man who makes Tio Pepe) and I was inspired by his passion for his wines.

Ingredients

80ml Gonzalez Byass Tio Pepe Fino Sherry

Two dashes celery bitters

15ml elderflower cordial

Method

This one is easy! Make sure that you crush some ice first (wrap ice cubes in a tea towel and bash them with a rolling pin.)

Add the ingredients to your shaker, add a wine glass full of crushed ice.

Close the shaker and shake hard and quick.

Open it up and pour the slush back into the wine glass.

Top with a bit more ice and then garnish with a ribbon of cucumber and a mint sprig.
